Raspberry & Blueberry Lime Drizzle Cake
I sent an email out to my work colleagues asking for any recipes they love. To my surprise I got some responses, links to recipes, recipes people had made up, ideas of things to cook and free food.
One of the recipes I was given was Good Food’s Raspberry & Blueberry Lime Drizzle cake. This cake has a fruit going throughout piece, with a almond texture similar to a bakewell with a zingy lime zest / juice. I was a bit worried about the bottom being soggy, but with the fruit explosion it’s understandable, it came out cooked.
The recipe is simple and very similar to making a normal cake batter. Cream butter and sugar until you get a light pale colour, add in eggs and flour and combine a little at a time. Add in ground almonds, then add half the blueberries and raspberries, tablespoo of lime zest and juice, each. Combine them all together and add in the other half. Transfer into a non-stick cake pan and cook in a 170 degree oven for one hour. Poke it with a metal skewer (or wooden) to see if it’s cook through, by it coming out clear. Once cooked, leave it to cool. Mix together sugar, lime zest and juice, boil in a pan until it boils and becomes sticky. Prick the cake, pour over the sauce allowing it to smother over the cake.
When I was talking about the recipe with my colleague, she said to add extra juice into the sauce, cover the fruit in flour so it rises an doesn’t sink and sprinkle lime zest and juice over the top for extra flavour.
I loved cooking this cake, as it was easy to make. I loved cutting in and eating a slice and sharing it with my work colleagues. The cake was moist and full of flavour. Compliments of it being tasty and delicious, some going back for seconds. Even my manager calling it an emotional experience, but I think he was kidding.
Overall I loved this recipe, would definitely make it again. I like the difference of it not being a lemon drizzle, as that can become predictable. I know my brother-in-law will want a slice of this in the future, as lemon drizzle is his favourite!
