Best sweet potato fries ever!
Do you ever find a recipe? Do it once find it tastes delicious and store it in the back of your mind whenever you go make this, you re-do it again and again. Yes? This is my sweet potato fries (or wedges) recipe. I can’t take the credit for it, as it belongs to Jamie Oliver. I once saw this recipe been made by someone else and it has stuck.
Sweet potatoes have more vitamin C then regular white potatoes, have vitamin A in them and good source of potassium and dietary fiber. I find sweet potatoes easier to digest and have move flavor then regular fries. Although nothing beats a chip from your local chippy. Here is how you make them:
One. Preheat the oven to 200ºC/400ºF/gas 6.
Two. Cut each sweet potato in half lengthways, cut each half in half lengthways, then each piece in half again so you end up with 8 wedges.
Three. Afterwards put them into a dish and cover with cold water and let them soak for 30mins. Changing the water if you can.
Four. One soaked, drain them and put back into a bowl. Add to a large mixing bowl, then sprinkle over a tiny pinch of sea salt and black pepper, and ½ a teaspoon of sweet smoked paprika. Drizzle with 1 tablespoon of olive oil, then toss everything together to coat.
Five. Spread out into a single layer in a large baking tray, then bake for 35 to 40 minutes, or until golden and cooked through. Take them out of the oven and transfer onto a serving dish.
Once you’ve baked these, there’s no going back to Aunt Bessies freezer version. They are super delicious and you can change the spices depending on how you feel. I like them with curry powder, chinese five spice, garlic powder or just plain sea salt ones. If you make them salty. toss them in salt before serving. I have them with fish fingers, burgers, curry, chilli or just on their own.
Recently I made loaded Mexican fries. Cook the fries in the same way. After 35mins add on pulled pork (I got the pre-bought packet from Tesco, it works perfect), chopped up a tomato and shredded cheese. Add this on top and put it back in the over for 7-10mins. I like it until the pulled pork goes with crispy, that’s my preference. Serve it with gracamole, sour cream and salsa. Perfect for a fakeaway treat after a long hard week at work.
